ACADEMIA.TV Dolci di carnevale di Luigi Biasetto [Ita] Thx kabino In questa masterclass Luigi Biasetto ci guida nella tradizione dei dolci di carnevale, creando un vero e proprio percorso con difficoltà crescente. Si parte con la castagnola, una pasta frolla da modellare a mano creando delle sfere; si prosegue con una frittella alla ricotta, un impasto semplice e profumato, che si può preparare inserendo tutti gli ingredienti all'interno di un mixer. Con la terza lezione si inizia ad alzare il livello, perché con i tortelli si deve preparare una pasta bignè e si deve iniziare a prendere dimestichezza con la sac à poche. Siamo pronti per la quarta ricetta: le frittelle alla veneziana, un impasto lievitato, simile a quello dei babà, arricchito con uvetta e pinoli. La masterclass si conclude con le chiacchiere, un impasto tenace, che richiede un po' di tempo e pazienza per essere steso molto sottile, ma che al momento dell'assaggio sa come ricompensarvi. Luigi Biasetto Luigi Biasetto, nato a Bruxelles da genitori veneti, ha trasformato la passione per la pasticceria in una vera e propria missione. Luigi Biasetto si diploma a Bruxelles Mâitre Pâtissier Chocolatier Confiseur Glacier e lavora in importanti laboratori di pasticceria. Negli anni '90 torna in Italia e inizia a ricevere numerose conferme professionali vincendo vari conconcorsi di pasticceria; la vittoria più importante è sicuramente quella conseguita alla Coupe du Monde de la Patisserie nel 1997, che dà inizio ad una florida carriera come formatore e allenatore. Nel 1998 apre la Pasticceria Biasetto a Padova, con l'impegno di offrire una pasticceria di grande qualità. Dal 2008 è membro di Relais Dessert, un'associazione che riunisce i pasticceri più importanti di tutto il mondo. Dal 2023 è membro AMPI, Accademia Maestri Pasticceri Italiani.
